Herb Frittata
Ingredients
60 gm dried vermicelli
6 eggs
60ml cream
60gm sweet basil, chopped
60gm Italian parsley, chopped
1 cup grated parmesan cheese
2 tbsp olive oil
1 onion, chopped
1 red capsicum, finely chopped
3 cloves garlic, crushed
ground black pepper
Preparation
1.Prepare pasta by boiling in water for 10 minutes. Drain and set
aside.
2.Place eggs in bowl with cream and chopped herbs and ½ cup
parmesan cheese. Whisk and add pepper to taste.
3.Add pasta to egg mixture and continue to whisk.
4.In a large pan add oil and heat. Add onion, capsicum and garlic.
Cook until soft.
5.Pour egg and pasta into pan and cook over low heat without
stirring for 5 minutes.
6.Sprinkle with remaining parmesan cheese.
7.Bake under grill for 5 minutes or until cooked.
8.Leave 5 minutes to cool and cut into wedges.
