Avocado, Orange and Almond Salad

 

Ingredients                                                                    Avocado-orange-almond salad                                                                 


½ cup almonds
4 tbsp olive oil
1 tsp cumin seeds
2 medium oranges
2 med tomatoes
2 small avocados
2 tbsp lemon juice
1 tbsp finely chopped parsley
finely grated parmesan cheese
1 small onion, sliced
grated black pepper
10 -12 black olives

Preparation

1. Lay out almonds on a flat baking tray. Sprinkle with olive oil. With a spoon roll almonds through oil until covered with a thin layer of   oil.    Sprinkle with cumin seeds.
2. Heat oven to 170 C and roast almonds for 12 minutes. Remove then allow to cool.
3. Peel oranges and slice into thick rounds.
4. Cut tomatoes and avocados into chunks
5. Mix 3 tbsp olive oil with, lemon juice, parsley and 2 tsp parmesan cheese.
6. On a large plate arranged oranges in a circle. Cover with tomato and avocado pieces. Pour ½ of the oil mixture over the fruit and vegetable combo. Cover with sliced onion and olives. Add the remaining oil mix.
7. Lightly crush roasted almonds in a mortar and pestle or briefly in a grinder. Sprinkle over salad to taste.
